
Mediterranean Chickpea Pasta Bowl

Ingredients:
- 1 cup GoodGrains Gluten Free Red Lentil or Quinoa Pasta
- ½ cup canned chickpeas, drained and rinsed
- ½ cup chopped bell peppers (red, yellow, or green)
- ¼ cup chopped cucumber
- ¼ cup crumbled feta cheese (optional)
- 2 tbsp hummus
- 1 tbsp lemon juice
- ½ tsp cumin powder
- Salt & pepper to taste
Instructions:
- Cook the pasta and let it cool.
- In a bowl, mix pasta, chickpeas, bell peppers, cucumber, and feta.
- Stir in hummus, lemon juice, cumin, salt, and pepper.
- Toss well and serve as a nutritious meal bowl.
