Mediterranean Chickpea Pasta Bowl

Ingredients:

  • 1 cup GoodGrains Gluten Free Red Lentil or Quinoa Pasta
  • ½ cup canned chickpeas, drained and rinsed
  • ½ cup chopped bell peppers (red, yellow, or green)
  • ¼ cup chopped cucumber
  • ¼ cup crumbled feta cheese (optional)
  • 2 tbsp hummus
  • 1 tbsp lemon juice
  • ½ tsp cumin powder
  • Salt & pepper to taste

Instructions:

  1. Cook the pasta and let it cool.
  2. In a bowl, mix pasta, chickpeas, bell peppers, cucumber, and feta.
  3. Stir in hummus, lemon juice, cumin, salt, and pepper.
  4. Toss well and serve as a nutritious meal bowl.
