
Pasta Summer Salad

Ingredients:
- 1 cup GoodGrains Gluten Free Red Lentil or Quinoa Pasta
- ½ cucumber, diced
- ½ cup cherry tomatoes, halved
- ¼ cup red onion, finely chopped
- ¼ cup feta cheese (optional)
- ¼ cup black olives, sliced
- 1 tbsp olive oil
- 1 tbsp lemon juice
- ½ tsp oregano
- Salt & pepper to taste
Instructions:
- Cook the pasta, drain, and let it cool.
- In a bowl, combine pasta, cucumber, tomatoes, onion, feta, and olives.
- Mix olive oil, lemon juice, oregano, salt, and pepper for the dressing.
- Pour over the salad, toss well, and serve chilled.
