Pasta Summer Salad

Ingredients:

  • 1 cup GoodGrains Gluten Free Red Lentil or Quinoa Pasta
  • ½ cucumber, diced
  • ½ cup cherry tomatoes, halved
  • ¼ cup red onion, finely chopped
  • ¼ cup feta cheese (optional)
  • ¼ cup black olives, sliced
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • ½ tsp oregano
  • Salt & pepper to taste

Instructions:

  1. Cook the pasta, drain, and let it cool.
  2. In a bowl, combine pasta, cucumber, tomatoes, onion, feta, and olives.
  3. Mix olive oil, lemon juice, oregano, salt, and pepper for the dressing.
  4. Pour over the salad, toss well, and serve chilled.
