Gluten Free Pasta Buddha Bowl

Ingredients:

  • 1 cup GoodGrains Gluten Free Red Lentil or Quinoa Pasta
  • ½ cup sautéed kale or spinach
  • ½ cup roasted sweet potatoes, cubed
  • ¼ cup cherry tomatoes, halved
  • 2 tbsp tahini dressing or yogurt dressing
  • 1 tbsp sunflower seeds
  • ½ tsp paprika
  • Salt & pepper to taste

Instructions:

  1. Cook pasta and set aside.
  2. Roast sweet potatoes with paprika and salt at 200°C for 15 minutes.
  3. Assemble a bowl with pasta, greens, sweet potatoes, and tomatoes.
  4. Drizzle with tahini dressing and top with sunflower seeds.
  5. Serve as a nutrient-rich power bowl.
