
Gluten Free Pasta Buddha Bowl

Ingredients:
- 1 cup GoodGrains Gluten Free Red Lentil or Quinoa Pasta
- ½ cup sautéed kale or spinach
- ½ cup roasted sweet potatoes, cubed
- ¼ cup cherry tomatoes, halved
- 2 tbsp tahini dressing or yogurt dressing
- 1 tbsp sunflower seeds
- ½ tsp paprika
- Salt & pepper to taste
Instructions:
- Cook pasta and set aside.
- Roast sweet potatoes with paprika and salt at 200°C for 15 minutes.
- Assemble a bowl with pasta, greens, sweet potatoes, and tomatoes.
- Drizzle with tahini dressing and top with sunflower seeds.
- Serve as a nutrient-rich power bowl.
