Gluten Free Pasta & Avocado Toast

Ingredients:

  • 1 slice whole grain or gluten-free bread
  • ½ ripe avocado, mashed
  • ¼ cup cooked GoodGrains Gluten Free Red Lentil or Quinoa Pasta
  • 1 tsp lemon juice
  • ½ tsp chili flakes
  • 1 tbsp crumbled feta or paneer (optional)
  • Salt & pepper to taste

Instructions:

  1. Toast the bread slice until crispy.
  2. Mash avocado with lemon juice, salt, and chili flakes.
  3. Spread mashed avocado over the toast.
  4. Top with cooked pasta and sprinkle feta or paneer.
  5. Serve as a high-protein, energy-boosting snack.
