
Gluten Free Pasta & Avocado Toast

Ingredients:
- 1 slice whole grain or gluten-free bread
- ½ ripe avocado, mashed
- ¼ cup cooked GoodGrains Gluten Free Red Lentil or Quinoa Pasta
- 1 tsp lemon juice
- ½ tsp chili flakes
- 1 tbsp crumbled feta or paneer (optional)
- Salt & pepper to taste
Instructions:
- Toast the bread slice until crispy.
- Mash avocado with lemon juice, salt, and chili flakes.
- Spread mashed avocado over the toast.
- Top with cooked pasta and sprinkle feta or paneer.
- Serve as a high-protein, energy-boosting snack.
