Gluten Free Pasta with Roasted Vegetables

Ingredients:

  • 1 cup GoodGrains Gluten Free Red Lentil or Quinoa Pasta
  • ½ zucchini, chopped
  • ½ bell pepper, chopped
  • ½ cup cherry tomatoes
  • 1 tbsp olive oil
  • ½ tsp paprika
  • ½ tsp black pepper
  • ½ tsp salt

Instructions:

  1. Roast zucchini, bell pepper, and cherry tomatoes with olive oil, paprika, salt, and pepper at 200°C for 15 minutes.
  2. Cook the pasta and mix with the roasted veggies.
  3. Serve warm.
