Avocado Pesto Pasta

Ingredients:

  • 1 cup GoodGrains Gluten Free Red Lentil or Quinoa Pasta
  • 1 ripe avocado
  • ¼ cup fresh basil
  • 1 clove garlic
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • Salt & pepper to taste

Instructions:

  1. Cook pasta and set aside.
  2. Blend avocado, basil, garlic, lemon juice, olive oil, salt, and pepper into a creamy pesto.
  3. Mix the pesto with the pasta and serve.
